Do you ever feel like you prepare the same recipes over and over? That is how I feel about side dishes. I have the same 5 or 6 side dish recipes that I rotate between our meals. So, I’ve decided to expand my repertoire and incorporate new side dishes into our menu. Since I’m already doing the research, I thought I’d share the recipes I find with you. My Side Dish Roundups will include recipes that I plan on testing and adding to our menu staples. They look so delicious! I can’t wait to try them!


Chickpeas are buttery in texture but have a mild nutty taste.  They lend themselves really well in salads, stews and dips.  They are really high in protein so they are a great option for vegetarians.  Lots of salads in the roundup this week.  Perfect for the warmer weather here in AZ!

Arugula has a strong peppery taste and has tons of health benefits.  It is a great source of folic acid and Vitamins A and C.  It is also the best vegetable source of Vitamin K and contains iron and copper.  Plus, it is an aphrodisiac! Who knew?

Lovebug LOVES peas.  In fact, for years one of her favorite snacks has been “cold peas”.  What are cold peas, you ask?  Frozen peas.  We just pull them out of the freezer, put them in a bowl and she gobbles them up.  It’s really a great snack because peas are full of fiber, protein and vitamins.  So good and good for you!

Fennel is a good source of vitamin C, fiber and potassium.  It has a lot of medicinal uses as well.  We often get fennel in our co-op vegetable basket and unfortunately my family and I don’t really love the anise flavor of it.  We hate wasting food so I am determined to find some tasty fennel recipes so that we might acquire an appreciation for it.  The recipes below look super tasty and promising.  So, I’m sure we’ll change our tune about fennel soon!

Brussels sprouts contain sulforaphane and indole-3-carbinol, both of which are believed to have anticancer properties.  I admit that brussels sprout do not rank up there in things I enjoy eating.  But, they are good for you so I am trying to acquire a taste for them.  These recipes look so good that I’m hoping they will do the trick!
